The FESCSUB variable controls whether the
percent escaping is done for real. Normally a \% sequence in a text
body is left as it is (since LaTeX needs the percent character to be
escaped), however if this variable is set, then the \% sequence will be
replaced by just a %. The percent character has to be escaped because
it conflicts with the field name identifier. The example program fragment
below sets the FESCSUB variable. There is no way to reset it.
